APPLE PIE FILLING 
4 1/2 c. sugar
1 c. cornstarch
2 tsp. cinnamon
3 tbsp. lemon juice
5 1/2 - 6 lbs. apples

Peel, core and slice apples in large saucepan. Blend first 4 ingredients and 1 teaspoon salt. Stir in 10 cups water and cook until thick and bubbly. Add lemon juice. Pour apples into hot mix and stir. Pour apple mixture into jars leaving 1" head space, adjust lids, process in boiling water bath as follows: Pints: 15 minutes; Quarts: 20 minutes; makes 6 quarts.
