MOM'S PINEAPPLE CASSEROLE 
1 c. sugar
12 tbsp. juice
2 sticks butter, melted
2 tubes Ritz crackers, crushed
2 lg. cans chunk pineapple (reserve juice)
6 tbsp. flour
2 c. sharp Cheddar cheese

Combine sugar, flour, pineapple juice. Mix well. Add pineapple and cheese. Mix well. Pour into 8 x 12 inch baking dish. Combine crushed crackers and melted butter. Cover pineapple mixture with crackers. Bake in 350 degree oven for 30 minutes. Served warm is best, but it can also be served cooled.
