CHICKEN HOLIDAY 
1/2 c. vegetable oil, as needed
2 broiler-fryer chickens, cut into eighths
1 (16 oz.) can whole berry cranberry sauce
1 (6 oz.) can frozen concentrated orange juice, thawed
2 tbsp. brown sugar
1 1/2 tsp. salt
1 tsp. prepared mustard
1/2 tsp. pepper

Preheat oven to 350 degrees. Heat oil in a large frying pan over medium heat and brown chicken on all sides. Place browned chicken in a large baking dish or roasting pan. Stir together cranberry sauce and orange juice in a bowl. Add sugar, salt, mustard and pepper; mix well.
