SAUSAGE POTATO SOUP 
1 lb. mild sausage
8 to 10 med. potatoes, pared and cubed
3 to 4 med. carrots, sliced
2 to 3 med. onions, chopped
2 tbsp. butter
2 tbsp. parsley
2 c. milk
Salt and pepper

Saute and crumble sausage; reserve drippings. Place sausage in 4 quarts lightly salted boiling water. Add potatoes and carrots. Saute onions in reserved drippings until transparent; add to other vegetables and meat.

When potatoes are done, reduce heat to low. Use a potato masher to slightly cream ingredients. Liquid should look cloudy. Add butter, parsley and milk. Allow to simmer 15 minutes. Add salt and pepper to taste.
