CHEESE AND POTATO SOUP 
1 or 2 tbsp. butter
1/2 med. onion, chopped
1 med. potato, diced
2 carrots, chopped
1 tsp. sage
Dash cayenne
Dash thyme
1 c. water or stock
1/3 c. grated mild cheddar cheese
1 c. milk

Melt butter, saute the vegetables until the onions become transparent. Add stock and herbs. Bring to a boil, cover and reduce heat. Simmer 20 minutes.

Over low heat stir in cheese until melted. Add milk simmer until hot. DO NOT BOIL.
