CHILI CON CARNE | |
2 lbs. beef, cut in sm. pieces 4 tbsp. cooking oil 2 tbsp. chili powder 2 tsp. salt 3 tbsp. flour 1 1/2 qts. hot water 4 c. cooked pink or brown beans This is a good recipe to cook in the crock pot if the beef is not too tough. If it is ox meat or other very tough meat, cook the beef in the pressure cooker until tender. You may need to tenderize it before cooking. If using the crock pot, fry the meat until brown for about fifteen minutes, then stir in the flour, salt, and chili; mix well. Add the hot water; stir together and cook slowly until meat is tender. (You might want to add raw beans in the crock pot, they are very good.) If you are using cooked beans, add them when the meat is tender; cook a few more minutes and serve. If you are using the pressure cooker, fry the meat until brown; add a little hot water and pressure until meat is tender, then stir in the flour and salt as for making gravy; add chili powder; stir well. Add hot water and cook 5 minutes without lid. Add cooked beans and serve hot. |
