MINI LEMON NUTMEG MUFFINS 
1 pkg. not or date quick bread mix
1 c. milk
1/4 c. oil
1 egg
1 tsp. grated lemon peel
1/2 tsp. nutmeg

Heat oven to 375 degrees. Grease bottoms of 44 mini muffin cups or line with paper baking cups. In large bowl, combine all muffin ingredients; stir until dry particles are moistened. Fill muffin cups 2/3 full. Bake at 375 degrees for 10-15 minutes or until toothpick comes out clean. Cool 5 minutes and remove from pan.

GLAZE:

1/2 c. sugar
1 tbsp. lemon juice
1 tbsp. water
1/4 tsp. almond extract

In small bowl, combine all glaze ingredients until well blended. Drizzle glaze over warm muffins.

To make regular muffins - grease 12 muffin cups. Bake at 375 degrees for 20-25 minutes.
