BATTER FRIED CHICKEN 
1 3/4 to 2 lbs. chicken, broiled
1 c. flour, sifted
1 1/2 tsp. baking powder
1/8 tsp. salt
2/3 c. milk
2 tbsp. shortening, melted
1 egg, separated

Sift together flour, baking powder and salt. Beat egg yolk until light, add milk. Combine liquid with dry ingredients and add shortening. Beat egg whites and fold into the batter. Heat shortening. Dip seasoned chicken (which has been cut into halves or pieces) lengthwise into batter. Let excess batter drip off. Place in hot shortening and fry.

Temperature: 360 degrees. Time: 12 to 13 minutes.
