MOM'S BUTTERSCOTCH COOKIES 
2 c. brown sugar
1/2 c. lard or Crisco
2 eggs
1/2 tsp. vanilla
3 1/2 c. flour
1/2 tsp. salt
1/2 tsp. cream of tartar
1/2 tsp. baking soda
2 tbsp. milk
1/4 c. coconut

Cream brown sugar and Crisco or lard. Beat in eggs and vanilla. Sift together flour, salt, cream of tartar and baking soda. Add gradually to creamed butter mixture. Stir in milk and coconut. Roll into logs and wrap in waxed paper. Chill overnight. Thinly slice on ungreased cookie sheet. Bake at 350 degrees for 8 to 10 minutes or until done.

If desired, this can also be a drop cookie. Chill overnight and drop by teaspoon on lightly greased cookie sheets.
