PORTUGUESE KALE SOUP | |
1 lb. kale 1 lb. potatoes 1 c. chopped onions 2 tsp. chopped garlic 2 tbsp. butter 1 1/2 c. cooked kidney beans 1 lb. linguica 1/2 c. chopped carrots 2 tbsp. olive oil 2 qts. chicken broth Prick and boil the linguica or chorizo. Peel potatoes, carrots. Slice the longuica after cooked. Add everything, but kale. Boil until tender, add kale. It is preferred to chop the kale. Cook until tender. Add the kidney beans at the end or they will fall apart. Hearty winter soup. |
