TOFU LOAF 
2 (1 lb.) blocks of tofu
1/4 c. chopped onion
1/4 c. grated carrot
1/2 c. chopped walnuts
1-2 tbsp. corn oil
1/2 can skim milk
1/2 c. bread crumbs
Salt to taste

Drain tofu and mash. Saute onion and carrot in oil. Combine rest of ingredients and mix well. Bake in oiled loaf pan for 40 minutes at 325 degrees.
