CHICKEN CACCIATORE | |
1 lb. boneless chicken strips 1/2 c. chopped onion 1 garlic clove, minced 2 tsp. oil 1 can (28 oz.) tomatoes 1 can (8 oz.) tomato sauce 1 tsp. salt 1 tsp. oregano 1/2 tsp. basil 1/2 tsp. ground red pepper 1 c. green pepper strips 1 1/2 c. rice Brown chicken, onion and garlic in oil. Add tomatoes, tomato sauce, seasonings and green pepper. Bring to a full boil. Stir in rice. Cover, remove from heat. Let stand 5 minutes. Stir before serving. Makes 4 servings in 20 minutes. |
