CHILI CON CARNE 
1 1/2 c. dry red or kidney beans
1 lg. onion, sliced
1 green pepper, chopped
1 lb. ground beef
1 lb. can tomatoes
1 (8 oz.) can seasoned tomato sauce
1-1 1/2 tsp. chili powder
1 1/2 tsp. salt
1 bay leaf

Wash beans a few times; let stand in water overnight. Add salt and more water if needed. Cover and simmer until tender, about 1 hour. Drain, reserving the bean liquid.

Brown onion, green pepper and meat in a little hot fat. Add beans, tomatoes, tomato sauce, chili powder, salt, bay leaf, paprika and dash cayenne. Cover and simmer 1 1/2 hours, adding bean water and more water if needed. Or use 2 (1 pound) cans red or kidney beans; add to meat mix and tomatoes.
