MARTHA'S COCONUT CREAM PIE 
3/4 c. sugar
3 tbsp. cornstarch
1/4 tsp. salt
2 c. milk
3 egg yolks
1/2 stick butter
1 tsp. vanilla
1 (9-inch) baked pastry shell
1 c. coconut

Combine sugar, cornstarch, salt, milk and egg yolks in saucepan. Cook until thickened. Remove from heat and stir in butter, vanilla and coconut. Cool and pour into pastry shell. Top with favorite topping (Cool Whip or meringue). Garnish with toasted coconut.
