PERFECT PUMPKIN SQUARES 
You'd never know these squares have instant mashed potatoes in them!

1 cup sifted all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 cup (1 stick) butter
1 1/2 cups sugar
1 egg
3/4 cup canned pumpkin
1/4 cup instant mashed potatoes
1/2 cup chopped pecans
1/2 cup raisins (optional)
confectioners' sugar, for sprinkling

Sift flour, baking powder, salt and cinnamon. Beat butter, sugar and egg, in a large bowl with an electric mixer at high speed, until light and fluffy. Stir in pumpkin and potatoes. Stir in flour mixture, a little at a time, beating well after each addition. Fold in pecans and raisins, if desired.

Turn into a greased 9x9x2-inch pan, spreading evenly. Bake at 350°F for 40 minutes or until center springs back when touched. Cool in pan.

Sprinkle with confectioners' sugar when cool. Cut in squares. Yummy!
