CHEESE SCALLOPED POTATOES 
2 lbs. baking potatoes
2 c. milk
1/4 c. butter
1/2 tsp. salt
Pepper to taste
1 c. shredded Cheese (Cheddar, Swiss, Monterey Jack, mixed)

Wash and peel potatoes, slice approximately 1/8 inch thick (in food processor use thin-slicing blade). Put in saucepan with milk and butter and bring to boil. Liquid should just cover potatoes; if not add more milk or butter to cover. Simmer 1/2 hour. Pour into buttered casserole and bake at 400 degrees 30-45 minutes until bubbly and potatoes are tender. Serves 6.
