BEEF STROGANOFF 
2 tsp. salt
1/4 tsp. black pepper
1/4 c. flour
3 lb. tenderloin cut in 2" strips
1/4 c. butter
1 clove minced garlic
1 c. chopped onion
1/2 lb. fresh mushrooms, halved
1 (10 oz.) can beef consomme
1/2 tsp. paprika
Dash cayenne
1/4 c. chopped parsley
1 c. sour cream
2 tbsp. dry sherry

1. Combine salt, pepper and flour.

2. Dredge beef in seasoned flour and brown in melted butter in heavy pot.

3. Remove beef and set aside. Add garlic, onion and mushrooms to pot and saute until onion is just golden.

4. Return beef to pot and add consomme, paprika, cayenne and parsley. Stir well. Reduce heat. Cover and simmer 20 minutes.

5. Add sour cream and heat through. Just before serving, add sherry, if desired.
