DIET CHICKEN BROCCOLI SKILLET 
1 (10 oz.) pkg. frozen cut broccoli
1/4 c. chopped onion
2 tbsp. margarine
1/4 tsp. dried thyme, crushed
2 (8 oz.) whole chicken breasts, skinned, boned and cut into 1/2-inch wide strips
1 tsp. lemon juice
3 med. tomatoes, cut in wedges

Thaw broccoli. Season chicken with salt and pepper and cook chicken and onion quickly in hot margarine until lightly done. Stir in broccoli, lemon juice, thyme, 3/4 teaspoon salt and 1/8 teaspoon pepper. Cover and cook for 6 minutes. Add tomatoes. One (1 1/4 cup) serving equals 2 1/2 lean meat exchanges, 2 vegetables exchanges, and 1/2 fat exchange.
