ORANGE CHICKEN 
Boneless chicken breasts
1 egg, beaten
1/3 c. pineapple juice or orange juice concentrate
1 c. Cornflake crumbs
1/2 coconut
1/2 tsp. curry powder
1/4 c. melted butter

Combine egg and juice and pour over chicken pieces. Marinate 1 to 2 hours.

Combine Cornflakes, coconut and curry powder. Drain chicken and roll in crumb mixture. Place in shallow buttered baking dish. Drizzle melted butter over tops. Bake 350 degrees for 40 to 50 minutes until done. Serves according to number of chicken pieces.
