MY BEST MEAT LOAF 
1/4 c. oil
1 onion, minced
1/4 c. green peppers, finely chopped
2 lb. ground chuck
1 c. rolled oats
2 eggs, beaten
3/4 c. tomato juice
3 1/2 tsp. salt
2 tsp. paprika
1 tsp. dry mustard
1/2 c. ketchup

Fry onion and green pepper in oil about 10 minutes. Combine remaining ingredients except ketchup. Add onion and green pepper; mix thoroughly. Pack in 10 x 5 inch greased loaf pan. Spread ketchup on top. Bake 1 hour at 400 degrees. Serve hot or cold. Makes 8 servings. For smaller loaf, use half recipe and bake only 45 minutes.
