ITALIAN CHICKEN 
1 med. onion, chopped
2 tbsp. oil
1 (16 oz.) can whole tomatoes
1 (8 oz.) can tomato sauce
1/4 tsp. each basil, oregano, and fennel seed
1 clove garlic, pressed
Salt and pepper to taste
6 chicken breasts, boned and skinned
2 tbsp. butter
8 to 12 oz. Mozzarella cheese, thickly sliced
Parmesan cheese

In medium saucepan, saute onion in oil until limp and transparent. Add tomatoes and tomato sauce, herbs, garlic, salt, and pepper. Simmer until sauce thickens slightly. In a large skillet, melt butter until it begins to sizzle. Add chicken breasts and saute until browned. Pour sauce over chicken. Cover skillet and simmer 15 minutes. Place a thick slice of cheese on each piece of chicken; sprinkle with Parmesan. Cover and cook 5 minutes or until cheese is melted. Serve with side of buttered pasta and salad.
