BELFAST MUFFINS 
1/2 c. sugar
1 1/2 c. flour
2 tsp. baking powder
1 tsp. nutmeg
1/2 tsp. cinnamon
3/4 c. wheat germ
1/2 c. oil
1 c. milk
1 egg
3 tbsp. molasses
Raisin, dates, and/or nuts (optional)

Mix the dry ingredients together in a large bowl. Blend the wet ingredients in another bowl. Then combine all and stir just until the dry ingredients are moistened. Bake in greased or lined muffin tins at 425 degrees for 20 to 25 minutes.
