SPLIT PEA SOUP 
2 1/2 c. split peas
1 onion
1 ham hock
2 qts. boiling water
Salt & pepper to taste

Rinse ham hock, add with chopped onion to boiling water. Rinse split peas, drain and add. Boil moderately fast for 1 1/2 hours. More water may be added if necessary. Stir occasionally to prevent scorching. Remove ham hock. Serve hot.
