BRAN MUFFINS 
3 c. bran (divided in half)
1 c. boiling water
1/2 c. melted butter
1 1/2 c. honey
2 eggs, beaten
2 c. buttermilk
2 1/2 c. whole wheat flour
2 1/2 tsp. baking soda
1 tsp. cinnamon
Chopped dates, raisins, apples or nuts (optional)

Pour boiling water over half of the bran, let stand. Mix remaining ingredients. Add moistened bran. Fill greased muffin pan 1/2 to 2/3 full. Bake at 400 degrees for 20 minutes.

Keep batter in tightly closed container in refrigerator and use as needed. Makes 3 dozen muffins. Recipe may be doubled.
