SALMON CHOWDER | |
1 med. onion 1/2 c. sliced celery 1/4 c. butter 1 pt. salmon with juice 8 med. - lg. potatoes, peeled & cut in bite size 1/2" pieces WHITE SAUCE: 4 tbsp. butter 4 tbsp. flour 1/2 tsp. salt 1/4 tsp. pepper 4 c. milk You can substitute clams or small shrimp with juice. Saute onion, celery in 1/4 cup butter. Boil peeled potatoes (cut in bite size pieces) until tender. Drain potatoes, add sauteed mixture, salmon including juice and mix together. Add prepared white sauce. Season to taste. SAUCE: Melt butter in pan, add flour and salt and pepper. Stir until smooth and bubbly. Remove from heat, add milk, stirring constantly to make it smooth. Heat until boiling, stirring constantly. |
