BROCCOLI CASSEROLE 
2 pkg. frozen chopped broccoli cooked and drained
1 can cream of mushroom soup
2 eggs
4 oz. sharp Cheddar cheese, shredded
1/2 c. mayonnaise
1 med. onion, chopped
1/2 c. Ritz cracker crumbs

Mix all ingredients except cracker crumbs. Pour into a square (8 x 8 inch) well buttered baking dish. Sprinkle top with crumbs and dot with butter. Bake 30 minutes at 350 degrees. Can be made ahead and baked just before serving. Also good made with chopped, cooked asparagus. Serves 6.
