LEMON BASIL GRILLED CHICKEN 
1/2 c. oil
1/4 c. lemon juice
1 tbsp. white wine vinegar
1 tsp. grated lemon peel (optional)
1 tbsp. dried basil
2 cloves garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
4 boneless, skinless chicken breast halves (about 1 lb.)

Combine oil and next 7 ingredients in shallow baking dish. Add chicken, turning to coat both sides. Refrigerate 30-45 minutes, turning to coat. Grill it. (When in a hurry, it's not bad in the microwave either.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
