4 eggs 5 tbsp. cake flour 3 tbsp. sugar 1 tsp. baking soda 1/2 tsp. baking soda 2 c. sour cream Butter Place eggs in blender. Add cake flour, sugar, baking soda, and salt. Process until smooth. Spoon in sour cream. Process until smooth. Heat griddle (300 degrees); brush with butter. Drop 1 measuring tablespoon of batter onto hot griddle to make 2 1/2 inch rounds. (Do not attempt to make larger hot cakes - they will be too fragile to turn.) Cook until few bubbles appear on top, then carefully turn and cook other side until golden brown. Serve immediately. Yields 50 pancakes. |
