SEAFOOD CHEESE CASSEROLE 
1 green pepper, chopped
2 stalks celery, chopped
1 med. onion, chopped
4 tbsp. flour
4 tbsp. butter
2 c. light cream
1 c. grated sharp cheese
1/2 tsp. salt
1/8 tsp. pepper
1 sm. can pimentos
3 lbs. cooked shrimp, shelled and deveined
1 can backfin crab
4 hard cooked eggs, sliced
3/4 c. buttered cracker crumbs

Cook green pepper, celery, onion in small amount of water until tender. Make white sauce of flour, butter, cream. Add cheese, salt and pepper to white sauce. Combined all ingredients except crumbs. Put in 3 quart casserole and top with crumbs. Bake 15-20 minutes at 400 degrees. (Can freeze.) Makes 10 servings.
