MINNIE'S CORNISH HENS 
1 lg. Cornish hen
Butter, melted
Salt to taste
Pepper to taste
1/4 c. sherry
2 tbsp. lemon juice
1 c. water
Zest from 1 lg. orange
4 tbsp. Cheddar cheese, grated
2 slices of lemon
Paprika

Split hen. Wash well and pat dry. Brush both sides with butter, salt and pepper. Bake uncovered at 350 degrees for 30 minutes. Baste every 15 or 20 minutes. Add sherry, lemon juice and water. Cook 1 hour if hens are large, 45 minutes if small. Put orange zest and cheese on each half of hen. Add one thin slice of lemon under each wing. Add a little paprika to gravy for color. May be made ahead and reheated for dinner. Serves 2.
