MEXICALI MEAT LOAF 
1 1/2 lbs. ground top of the round
1 egg
2 heaping tbsp. prepared mustard
1/4 tsp. crushed red pepper
3/4 c. Italian seasoned bread crumbs
1/2 c. evaporated milk
2 strips bacon
1 (8 oz.) can tomato sauce
4 to 6 med. potatoes, halved
4 to 6 carrots, sliced lengthwise
1 1/2 c. sliced mushrooms

Mix together lightly ground beef, egg, mustard, red pepper, bread crumbs and evaporated milk. Shape into loaf and place in center of large baking pan. Arrange bacon strips on top of meat loaf. Bake for 45 minutes at 350 degrees.

While meat loaf is baking parboil vegetables, about 15 minutes. Take out meat loaf (after the 45 minutes is up). Pour tomato sauce on top. Arrange the vegetables around the meat loaf, return to oven for another 15 minutes. Makes 6 generous servings.
