HONEY-GINGER CHICKEN 
2-3 lbs. chicken drumsticks & thighs
1/3 c. flour
3/4 tsp. salt
1/2 tsp. ground ginger
1/4 tsp. pepper
1/3 c. honey
1/3 c. chili sauce
1/3 c. soy sauce
1/2 tsp. ground ginger

Heat oven to 425 degrees. Mix flour, salt, ginger and the pepper. Excess chicken skin should be trimmed off. Coat chicken pieces thoroughly with flour mixture. Bake uncovered in a 13"x9" pan for 40 minutes. Turn chicken and bake 30 minutes more.

Mix honey, chili sauce, soy sauce and ginger. Remove chicken and drain fat. Place chicken in a casserole dish and pour honey mixture over chicken. Cover and bake 15 minutes, spooning honey mixture onto chicken every 5 minutes. Serve immediately or refrigerate and serve chilled.
