RICHMOND PEANUT BUTTER COOKIES 
1/2 c. butter
1/2 c. sugar
1/4 c. plus 1 tbsp. brown sugar
1 egg
1/2 tsp. vanilla
1/2 c. chunky peanut butter
1 c. flour
1/2 tsp. baking soda
1/2 tsp. salt

In large bowl, beat butter and sugars together until fluffy. Stir in egg, vanilla and peanut butter. Mix well. Stir flour, soda and salt together. Add to batter. Stir until well blended.

Using a #40 scoop or an ice cream scoop, drop onto greased baking sheet. Bake in preheated 375 degree oven until golden brown, about 12 minutes. Makes 2 dozen big cookies.
