IMPOSSIBLE BROCCOLI PIE 
2 c. fresh broccoli (or frozen)
1/2 c. chopped onion
1/2 c. chopped green pepper
1 c. (4 oz.) chopped Cheddar cheese
1 1/2 c. milk
3/4 c. biscuit baking mix
3 eggs
1 tsp. salt
1/4 tsp. pepper

Oven at 400 degrees. Lightly grease 10 x 1 1/2 inch pie plate. Cook broccoli in heated water (1/2 teaspoon salt and 1 cup water). Cover, heat to boiling, 5 minutes, drain.

Mix broccoli, onion, green pepper and cheese in pie plate. Beat remaining ingredients until smooth (15 seconds in blender). Pour into pie plate. Bake 35 to 40 minutes or until golden brown and custard is set. Let stand 5 minutes before cutting. Serves 6. Refrigerate remaining pie.
