GREEN ENCHILADAS 
1 lb. ground beef
1 onion, chopped
Grated cheese
12 corn tortillas

Fry ground beef; drain. Soften tortillas in hot oil. Roll meat, onion and cheese in tortillas.

SAUCE:

Melt 1/2 cup butter. Add 2 tablespoons flour to make a paste. Add 2 cups milk, 1 pound Velveeta cheese and 1 can chopped green chilies. Cook till thick. Pour sauce over enchiladas. Bake at 350 degrees till bubbly. This was the first recipe that was given to me. I was in high school.
