CARROT CAKE WITH CREAM CHEESE FROSTING | |
1 1/2 c. oil 2 c. sugar 4 eggs 2 c. flour 1 1/2 tsp. baking soda 1 tsp. salt 2 tsp. cinnamon 2 c. grated carrots 1 c. nuts, chopped 1 can drained, crushed pineapple Combine oil and sugar, add eggs, beat well. Add flour gradually mixing well. Add soda, salt, cinnamon. Mix well. Add remaining cake ingredients. Bake in greased and floured pan at 325 degrees until done. When cool - frost. FROSTING: 1 stick butter 8 oz. cream cheese 1 lb. powdered sugar 1 tsp. vanilla 1 c. nuts, chopped |
