SPINACH-MUSHROOM SQUARES 
1 medium onion, chopped
1/4 lb. mushrooms, sliced
2 tbsp. butter
4 eggs (or 4 egg whites and 1 egg)
2 (10 oz.) pkgs. frozen chopped spinach, thawed and drained
1/4 c. bread crumbs
1 can condensed cream of mushroom soup
1/3 c. grated Parmesan cheese
1/2 tsp. salt
1/2 tsp. basil
1/4 tsp. nutmeg
1/8 tsp. pepper

Cook onion and mushrooms in butter in large skillet until soft. Let cool. Beat eggs (or egg and egg whites) in bowl until frothy. Stir in onion, mushrooms, spinach, bread crumbs, soup, 2 tablespoons cheese and seasonings. Combine well. Spread mixture in buttered 9 x 9 inch dish. Sprinkle with remaining cheese. Bake uncovered at 325 degrees for 1 hour.
