CRABMEAT AU GRATIN 
3 tbsp. butter
1/2 green pepper, minced
1/2 onion, chopped
3 tbsp. all-purpose flour
2 c. milk
2 c. crabmeat, shell or cartilage removed
1/2 tsp. salt
Dash ground nutmeg
1/2 c. shredded cheese
Buttered bread crumbs

Melt butter, add pepper and onion and cook for 5 minutes. Add flour and milk, then crabmeat, salt and nutmeg. Cook 10 minutes. Pour in shallow buttered baking dish or use crab shells. Sprinkle with shredded cheese and buttered bread crumbs and bake at 350 degrees until cheese is brown. Yield: 4-6 servings.
