SOUR CREAM RAISIN BARS
BASE & TOPPING:

1 c. brown sugar
1 3/4 c. oatmeal
1 3/4 c. flour
1 tsp. baking soda
2 sticks butter, melted

FILLING:

1 1/2 c. raisins
1 1/2 c. sour cream
2 beaten eggs
1 tsp. salt
3 tbsp. cornstarch
1 tsp. vanilla
1 1/2 c. sugar (white)
Dash of cinnamon

First mix together the base and topping ingredients in a small bowl. Mix with a fork and mix like a pie crust. Press 3/4 of the crumb mixture into a 9"x13" pan. Bake base in a 350 degree oven for 10 minutes. Save the rest of the crumbs for the topping to be used later.

While base is baking, cook raisins in a covered saucepan. Before you cook the raisins, add 1/2 cup water. Cook until the raisins seem tender, 5 minutes. Drain the raisins and set aside.

Mix remaining ingredients in a pan and cook until the mixture begins to thicken. Stir constantly so it will not burn to the bottom of the saucepan. Add the raisins. Pour over the baked crumb mixture. Sprinkle remaining crumb mixture on top of the filling. Bake at 350 degrees for 20 minutes.
