QUICK & EASY VEGETABLE PIE | |
2 c. chopped broccoli and/or cauliflower 1/2 c. chopped green and/or red pepper 1/2 c. chopped onion 1 c. shredded Cheddar cheese 1 1/2 c. milk 3 eggs 3/4 c. baking mix (like Bisquick) 1 tsp. salt 1/4 tsp. pepper Dash of oregano Dash of garlic In the summer, I substitute yellow squash, zucchini and tomatoes from my garden, S.P. Place broccoli in a saucepan with about 1 inch water. Cover and cook until almost tender (about 5 minutes). Drain well. Grease a pie pan and fill with all vegetables and cheese. In a separate bowl, beat all remaining ingredients well until very smooth. (A hand mixer works nicely.) Pour over the vegetables in the pie pan and bake at 400 degrees for about 40 minutes until golden brown and edge comes out clean. Let stand 5 minutes before cutting. |
