CHERRY NUT BREAD 
2 c. flour
1 c. plus 2 tbsp. sugar
1 1/2 tsp. baking powder
1/4 c. shortening
1 egg
1/2 c. orange juice
1 tbsp. grated orange peel
2 tbsp. cherry juice or warm water
1 c. tart cherries, well drained, coarsely chopped
1/2 c. chopped nuts

Sift together flour, sugar and baking powder. Cut in shortening, stir in egg, cherry juice or water. Fold in cherries and nuts. Pour into greased individual loaf pans, 5 x 2 1/2 x 2 1/4 inches to make 4 mini loaves. Bake at 350 degrees for 25-30 minutes. Yields 4 loaves.
