FISH 'N' TATERS 
4 (4 inch) squares fish fillets
4 med. potatoes
2 sticks butter
2 (9x9 inch) baking dishes

Melt 1 stick butter in each dish. Using one dish for fish and one dish for potatoes, roll fish and potatoes in melted butter, coat with coating and put back into dish. Sprinkle with garlic salt and bake at 350 degrees for 45 minutes to 1 hour.

COATING MIX:

2/3 c. crushed saltines (1 stack saltines = 2/3 c. crushed)
1/4 c. Parmesan cheese
1/2 tsp. basil, oregano, salt
1/4 tsp. garlic powder

Great on orange roughy.
