BASIC FILLING: 1 beaten egg Dash of salt Few drops vanilla 1/2 c. country cream, sweet or sour (may use evaporated milk) Use Quick Roll dough or favorite sweet roll dough recipe and add 1/4 cup more shortening. Quick Roll recipe makes 10 or more kuchen. Make dough balls about the size of your fist. Place on a floured surface to rest while making the filling. Cover. Mix filling. Ingredients given are for one kuchen. If making more, after 4 or so cut back a bit (6 makes enough for 5). Shape and roll dough ball as for pie crust. Roll gently so as not to kill the life of the dough. Place in greased pie tin. Place fruit on dough and cover with filling. Sprinkle first with cinnamon and then sugar. Bake immediately at 350 degrees for 25-30 minutes or until filling is set. (Cottage cheese and rhubarb may take longer.) Remove from pans immediately and cool on rack. Any sliced or diced fruit may be used. Drain well, if canned. Raw apples should be parboiled. Rhubarb and cottage cheese may need a bit more sugar and flour. To serve, cut in wedges and eat from the hand. Freezes well. |
