SKILLET CHICKEN AND PORK SAUTE' | |
3/4 lb. boneless pork, cubed 1 chicken breast, split, boned and cubed 3 tbsp. cornstarch 3 tbsp. butter 1/2 onion, diced 1/2 green pepper, diced 1 med. tomato, diced 3/4 c. chicken broth 2 tbsp. soy sauce 2 tbsp. raisins (preferably golden seedless) 2 1/2 c. cooked rice Shake the cubed pork and chicken in a bag with the cornstarch. Melt the butter in a large skillet. Add pork and chicken. Brown on all sides. Add onion. Cook over medium heat for 5 minutes. Add the green pepper, tomato, chicken broth, soy sauce and raisins. Cover and simmer for 25 to 35 minutes or until the pork is tender. Spoon the hot, coked rice onto a platter. Top with the saute' and serve immediately. Serves 4. |
