CHICKEN - RICE ORIENTAL 
1 sm. clove garlic, minced
2 tbsp. oil
1 1/2 c. diced or slivered cooked chicken, ham, beef, or pork
1/2 med. red or green pepper, cut into strips
1/8 tsp. pepper
2 c. water
1 1/2 c. Minute rice
1 1/2 c. shredded raw spinach, lettuce or escarole
1 tbsp. soy sauce

Saute garlic in oil in skillet until lightly browned. Add chicken, red pepper, pepper and water. Bring quickly to a boil over high heat. Stir in rice. Cover; remove from heat and let stand 5 minutes. Just before serving, add spinach and soy sauce, tossing lightly. Serve with additional soy sauce, if desired.

Makes 4 servings.
