EGGPLANT BURGER--ITALIAN STYLE 
1 lg. eggplant
4-6 eggs
Flour
Salt and pepper to taste
1/2 tsp. Italian seasoning
1/2 c. oil
1 lb. hamburger
2 eggs
Pinch of garlic powder
Pinch of salt and pepper
Pinch of Italian seasoning
1/2 c. bread crumbs
Spaghetti sauce
Grated cheese

Slice eggplant 1/4 inch thick. Mix 4-6 eggs, salt, pepper, Italian seasoning. Dip eggplant slices in flour and egg mixture. Fry in oil quickly on both sides. Set aside.

Mix hamburger, eggs, garlic powder, salt, pepper and Italian seasoning, and bread crumbs.

In baking pan, cover bottom of pan with thin layer of spaghetti sauce. Cover with slices of eggplant with hamburger mixture. Make patties 1/4 inch thick and place one on each slice of eggplant. Cover each burger with slice of eggplant. Cover with sauce, sprinkle with cheese. Bake at 350 degrees for 30 minutes. Serve with tossed salad and fresh Italian bread.
