MOLDED CRANBERRY NUT RELISH | |
1 (15 or 16 oz.) pkg. fresh cranberries 1 1/2 c. sugar 1 1/2 c. dry red wine Water 1 envelope unflavored gelatin 1 (6 oz.) pkg. lemon flavor gelatin 1 1/2 c. diced celery 3/4 c. walnuts, chopped In 3 quart saucepan combine cranberries, sugar, wine and 1/2 cup water. Sprinkle on unflavored gelatin over medium heat, heat mixture to boiling stirring constantly. Reduce heat to low, simmer 3 minutes, stirring constantly, stir in lemon flavor gelatin until gelatin is completely dissolved. Remove from heat and stir in 1 cup cold water. Refrigerate mixture until gelatin mixture mounds slightly when dropped from a spoon, about 2 hours. Gently fold in celery, walnuts into gelatin mixture, pour into 8 cup mold. Cover and refrigerate until set 3 1/2 hours. |
