EGGPLANT PATTIES | |
1 med. eggplant, peeled and cubed 1 1/4 c. cracker crumbs 1 1/4 c. sharp American cheese, grated 2 eggs, slightly beaten 2 tbsp. parsley 2 tbsp. onion, sliced 2 tbsp. oil 1 clove garlic, minced 1/2 tsp. salt Dash of pepper Cook eggplant covered until tender. Drian well and mash. Stir in crumbs, cheese, eggs, parsley, onion, garlic, salt and pepper. Shape into 8 patties about 3 inches in diameter. Cook in hot oil about 3 minutes on each side, or until golden brown. |
