APPLE SPICE CAKE 
2 1/2 c. peeled, chopped Granny Smith apples
2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. each cloves & nutmeg
2/3 c. butter, softened
1/2 c. sugar
1/2 c. brown sugar
3 lg. eggs
1/2 c. milk
1/2 c. chopped walnuts (opt.)
1 Granny Smith apple, peeled & sliced thin
2 tbsp. powdered sugar
1/4 c. apple jelly, heated

Preheat oven to 350 degrees. Grease 9"x13" springform pan. Line with wax paper and grease paper.

Place chopped apples in microwave proof dish, cover and microwave on high 3 to 4 minutes. Mash with back of spoon; cool.

Combine dry ingredients and spices; set aside. Beat butter and sugars until fluffy; add eggs one at a time. Add dry ingredients alternately with milk. Fold in cooked apples and nuts. Spoon into pan. Arrange apple slices on top, around edge of pan. Bake 1 hour 10 minutes. Cool, remove from pan. Sprinkle with powdered sugar, brush apples with jelly. Serve warm with caramel sauce.

Since microwave ovens vary in power, you may need to adjust your cooking time.
