PASTA CARBONARA | |
2 tbsp. olive oil 3/4 lb. chopped bacon 1/2 c. chopped onion 3 eggs 1 1/4 c. light cream 1/4 c. freshly grated Parmesan cheese Salt to taste Freshly ground pepper 12 oz. pasta 1 c. grated carrots 1 c. chopped broccoli Extra cheese for serving Heat oil in skillet over medium heat. Add bacon and saute until bacon browns, approximately 4-5 minutes. Drain oil from skillet. Whisk eggs in bowl, add cream and Parmesan cheese. Set aside. Cook pasta according to directions. Add carrots and broccoli and onions to skillet, saute 2 minutes. Add pasta to mix in bowl and then add all to skillet. Heat until mixture thickens and is heated thoroughly, stir frequently. Makes 4 healthy servings. Serves 4. |
